A Masterclass in the art of Patisserie

In the world of baking, patisserie always comes as the creme de la creme. And very few of us will even dare having a go. Those beautiful “petits gateaux” that we enjoy looking at in the French boulangeries, also look very difficult to make.

So, I really felt on a mission, when Maxine from Just Cook Cookery school invited me to showcase my skills. I was determined to show that with a bit of patience, patisserie is accessible to anyone. “Patisserie, yes you can!”

Three lovely ladies joined us on a Saturday afternoon to do just that, although very keen bakers, they had never tried to make a gateau before, “looks so complicated they said”.

The class was hands on all the way through, from genoise sponge, meringue butter cream, glossy chocolate ganache and chocolate marble, they did it all. They learned the art of assembling a “petit gateau”. It’s all about the layers and adding that final touch, that little “je ne sais quoi” that will lift your cake to the “wow”.

Despite a few “faux pas” here and there, the results was truly astonishing!

The class that was supposed to last only 3 hours went for an extra hour as these ladies surprised themselves.

Watching this wonderful photo, I think I can say that I have achieved my goal, “Patisserie, yes you can!” These ladies had never done it before! In just over three hours they managed to produce those little beauties.

What will you learn?

I will demonstrate from start to finish how to make a gorgeous summer tart. I really want to show you that pastry is not scary, it is in fact very enjoyable and easy to do at home. You will learn how to make the perfect sweet shortcrust, a beautiful creme patissiere and how to give the finish product that sophisticated French touch.

Dare I say, book early as spaces are limited.

Unique celebration cakes

Celebration cakes that you won’t find in a supermarket!

Last week, was another busy week baking at Gourmandises, as well as my regular deliveries to my lovely delis and my farmer’s market, I was also baking some very special celebration cakes for a 40th and 60th birthday.

Now I know what you’re going to say, so what?

A few weeks ago, I got a phone call from a lovely gentleman, called Andy. Andy found out about Gourmandises on Google, he was looking for something out of the ordinary, delicious and impressive at the same time. He had a look around the supermarkets, but what they had to offer he said, “was not very interesting”. So he had a look at Google and found Gourmandises.

He went and ordered four of my special celebration cakes.

What Andy found at Gourmandises, supermarkets can’t deliver.

When I created Gourmandises, I had a customer like Andy on my to mind. I really wanted to create a wow factor. Every time I bake, I imagine the smiles on my customers faces. I love what I do, yes, but I want to do it right. It’s got to look amazing but it’s got to taste delicious too, and this is something difficult to get when you produce high volumes like many supermarkets do.

At Gourmandises you will get the personal touch, you will get to speak and meet the pastry chef. It’s all about passion not quantity!
