If you’ve always thought that making pastries was a job for the professionals, let me tell you it’s not. This class will teach you in easy steps how to bake the perfect pastry, with no soggy bottoms.

In this class you will make:

  • Your own sweet shortcrust
  • You will make ganache, creme patissière, frangipane and various curds

You will also learn some quick techniques to decorate your bakes
You will then bake your own little tartes
This class is opened to everyone, even a complete novice, it’s a hands on and a fun one to attend, plus you will go back with a box of your own creations to enjoy at home.

A drink and nibbles will be provided.

The Rustic Wedding show at Lattenbury Hills

This is an exciting new venue. On 22nd April 2017, they are organising, The Rustic Wedding Show at Lattenbury Hills, showcasing the best suppliers Cambridge has to offer and we are very proud to be part of it.

Lattenbury Hills is actually 2,5 acres of farmland with a large pond, a woodland and a paddock with stunning views of the Cambridgeshire countryside. If you’re looking for something different for your wedding, this is the place, a blank canvas for you to work from. You can have your wedding exactly as you want it, there is space for a marquee or a tipi and also for your guests, who apparently can even camp. The venue is yours 3 days prior to the event, now, not many give you that kind of flexibility!

The show starts at 11 am until 4 pm so come along to sample our delicious patisserie. We will be showcasing our gateaux, croquembouche and macarons.

Chocolate lava cake

Chocolate lava cake: your little treat for your loved one on Valentine’s day.

If you are looking for something different and really make it special for your loved one you might like to have a go at this recipe. This sweet chocolate lava cake could be the ideal treat for your valentine. They are really easy to make and so delicious.


150g dark chocolate

75g sugar

3eggs and 3 egge yolks

125g butter

50g flour

25g cocoa


Set your oven to 180° C. Butter 4 little ramekins.

Melt your chocolate and butter over a bain marie.

Whisk your sugar and eggs to a light and fluffy consistency,


then slowly fold into your melted chocolate mixture until completely incorporated into your mix.


Sift your flour and cocoa and fold into that mixture.


Fill your ramekins and cook for 8 to 10 minutes until the outside is firm.

Unmold onto your serving plates and sprinkle with cocoa powder and serve with a dollop of cream. Tuck in, the middle should be oozing a lush and delicious dark chocolaty like thick sauce.

Et, voilà…

Bon appétit!

Tip: add your favourite tipple to the mix, right at the end after you have sifted and folded your flour and cocoa into the mix.

A Masterclass in the art of Patisserie

In the world of baking, patisserie always comes as the creme de la creme. And very few of us will even dare having a go. Those beautiful “petits gateaux” that we enjoy looking at in the French boulangeries, also look very difficult to make.

So, I really felt on a mission, when Maxine from Just Cook Cookery school invited me to showcase my skills. I was determined to show that with a bit of patience, patisserie is accessible to anyone. “Patisserie, yes you can!”

Three lovely ladies joined us on a Saturday afternoon to do just that, although very keen bakers, they had never tried to make a gateau before, “looks so complicated they said”.

The class was hands on all the way through, from genoise sponge, meringue butter cream, glossy chocolate ganache and chocolate marble, they did it all. They learned the art of assembling a “petit gateau”. It’s all about the layers and adding that final touch, that little “je ne sais quoi” that will lift your cake to the “wow”.

Despite a few “faux pas” here and there, the results was truly astonishing!

The class that was supposed to last only 3 hours went for an extra hour as these ladies surprised themselves.

Watching this wonderful photo, I think I can say that I have achieved my goal, “Patisserie, yes you can!” These ladies had never done it before! In just over three hours they managed to produce those little beauties.
