France has a long tradition of baking beautiful, layered cakes. These are the equivalent of the rustic trend for naked and butter cream cakes here in the UK. I follow the traditional French recipe for my French-style butter cream cakes, using a genoise sponge to add lightness and a melt-in-the-mouth texture. The buttercream used to sandwich together each sponge is made with a meringue base, and the way it tastes is up to you – we make each one bespoke, so you have the chance to pick your favourite flavour. Will it be fruity with cherry, strawberry or blueberry; indulgent with salted caramel, chocolate or vanilla, or out-of-the box and exotic with mango, passion fruit or matcha? Let us know your ideas and we’ll create something just for you.
It’s your wedding day, so do it your way – and if that means no tiered cake, then so be it! We can put together a stunningly presented dessert table groaning with Gourmandises’ delicious patisseries: petites tartes, eclairs, profiteroles, petits gateaux, petites madeleines, profiteroles, macarons and more. This is a completely bespoke option, and we can base flavours, designs and colour schemes around your requirements. We are also happy to add a cake, a macaron tower or even a croquembouche if you wish. If you’re looking for a showstopper – this gorgeous golden tower is the choice for you. The croquembouche is the quintessential French wedding dessert. It’s made from a tower of tiny profiteroles filled with pastry cream, which can be flavoured with a range of mouthwatering options: coffee, chocolate, vanilla, pistachio, passion fruit and more – the choice is yours. The assembled tower (also called a pièce montée) is then drizzled with thin strands of golden caramel to make a delicate cage, before being adorned with flowers, sugared almonds and nougatine.
Want something decadent, rich and oozing with indulgence? Let me introduce you to the classically French opéra gâteau. Made of a light Genoise sponge, layered with chocolate ganache and a flavoured buttercream of your choice, it’s then finished with a shiny dark chocolate glaze and decorated with handcrafted chocolate tiles. Available from two to five tiers, this is a chocoholic’s dream!
Made famous worldwide by patissiers such as Pierre Hermé, these gorgeous little delights are delicious and versatile. Our hand made macarons come in an array of colours and flavours. They’re the perfect size for favours for your guests, or can be layered in a show-stopping tower in your wedding’s colours as an alternative to a tiered cake.
